NO!\u00a0\u00a0 My eyes and stomach are focused on Cinco de Mayo.\u00a0\u00a0 Why?\u00a0\u00a0\u00a0Because\u00a0Mexican food is\u00a0my desert island\u00a0pick\u00a0and there\u2019s some\u00a0muy\u00a0bueno\u00a0news\u00a0for me to taco-bout.\u00a0\u00a0\u00a0\u00a0So,\u00a0let\u2019s\u00a0say goodbye to\u00a0chili\u00a0weather\u00a0and\u00a0warm up with the thought that\u00a0some\u00a0new places to eat, drink and be merry\u00a0will soon be\u00a0coming to\u00a0the east end.\u00a0\u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Two\u00a0appetizing\u00a0moves worth mentioning are\u00a0\u2014Sotto\u00a0Sopra\u00a0in Amagansett is becoming\u00a0<a href=\"https:\/\/ilbuco.com\/\" data-type=\"URL\" data-id=\"https:\/\/ilbuco.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">il\u00a0Buco\u00a0al Mare<\/a>,\u00a0while\u00a0Rita Cantina\u00a0is setting\u00a0up shop in the former home of\u00a0Bel Mar Ristorante and, more famously\u00a0before that,<a href=\"https:\/\/www.yelp.com\/biz\/michaels-maidstone-bar-and-restaurant-east-hampton\" target=\"_blank\" rel=\"noreferrer noopener\">\u00a0Michael\u2019s<\/a>,\u00a0the\u00a0vaunted Springs restaurant\u00a0that called it quits in 2019.\u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rita Cantina<\/strong>&nbsp;<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright size-large is-resized\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/hamptonschatter.net\/chatter\/wp-content\/uploads\/2021\/05\/MICAHELS.jpeg?resize=354%2C235&#038;ssl=1\" alt=\"\" class=\"wp-image-5445\" width=\"354\" height=\"235\"\/><figcaption>Mexican Makeover at Michael&#8217;s<\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Created as a modern and coastal Mexican concept by&nbsp;brothers and business partners Marc Miller and&nbsp;chef Eric Miller, and located at 28&nbsp;Maidstone&nbsp;Park Road&nbsp;in Springs, Rita Cantina will celebrate Mexican food using locally sourced fare, including&nbsp;all the ingredients that&nbsp;\u201cswim, graze and grow\u201d&nbsp;in Gardiners Bay and the surrounding area. Like any great Mexican establishment, they\u2019ll also offer an extensive, tequila-focused bar program. Unfortunately, we won\u2019t get to sample those tequila specialties for Cinco de Mayo on Wednesday, but they\u2019re&nbsp;perfecting the space and&nbsp;aiming to open by Memorial Day, so there\u2019s plenty of time to plan a visit.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The Millers have close to four decades of&nbsp;experience working in fine dining. Eric helped pioneer&nbsp;dock-to-dish and farm-to-table&nbsp;dining&nbsp;in the Hamptons, while&nbsp;Marc, who is handling front-of-house operations,&nbsp;owned and operated&nbsp;East Hampton\u2019s&nbsp;Bay Kitchen Bar&nbsp;from 2014\u20132018. Keeping things in the family,&nbsp;Eric\u2019s son and business partner Adam Miller lays claim to what promises to be an&nbsp;inventive&nbsp;bar program.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>i<\/strong><strong>l&nbsp;<\/strong><strong>Buco<\/strong><strong>&nbsp;al Mare<\/strong>&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I don\u2019t have a ton of info on this one, but I recently learned that after 12 years at 231 Main Street in Amagansett, chef\u00a0Josh\u00a0Savi\u2019s\u00a0Tuscan spot, Sotto Sopra has closed.
